Nolberto Olaya is truly in touch with nature and has done a remarkable job creating an honest ecosystem, with respect for all the natural processes, using organic materials that will act as fertilizers, quality boosters and immunity shield for his plants.
This lot underwent a natural processing and the ripe cherries were fermented in plastic tanks for 100– 120 hours. After fermentation, the cherries are rinsed and then dried approximately 20 days.
